Philacatessen ‘SMASHED’ CARROTS
Food columnist Keri White found that her recipe for “smashed”
potatoes was a big hit, so she’s using the same premise on
carrots. Although carrots have a higher water content than
potatoes and won’t become as crispy, the technique she uses
imparts a signifi cant amount of fl avor without deep-frying.
